The Production Supervisor - Beef Harvest is responsible for overseeing daily harvest floor operations within a federally inspected beef processing facility. This role ensures production targets are achieved while maintaining strict adherence to food safety, quality assurance, animal welfare, and employee safety standards. The ideal candidate has hands-on experience in beef harvest operations, including slaughter, hide removal, evisceration, carcass dressing, and carcass chilling processes.
Supervise daily beef harvest operations, ensuring production schedules and yield targets are met.
Coordinate workflow across slaughter, dressing, evisceration, carcass splitting, and cooler entry.
Monitor line speeds and staffing levels to optimize efficiency and minimize downtime.
Identify and implement process improvements to increase throughput and reduce waste.
Troubleshoot operational issues in real-time.
Ensure compliance with USDA-FSIS regulations and maintain readiness for inspection.
Enforce HACCP plans, SSOPs, and GMPs.
Monitor Critical Control Points (CCPs) and ensure proper documentation.
Work closely with QA and food safety teams to address non-conformances and corrective actions.
Ensure traceability and proper carcass identification procedures.
Ensure humane handling practices in compliance with the Humane Methods of Slaughter Act.
Monitor stunning effectiveness and corrective actions as required.
Train staff on proper animal handling and welfare protocols.
Supervise and lead a team of production employees on the harvest floor.
Train new hires on harvest procedures, safety, and quality standards.
Conduct performance evaluations and provide coaching and corrective action when needed.
Foster a culture of accountability, teamwork, and continuous improvement.
Ensure proper PPE usage and adherence to safety procedures.
Promote and enforce workplace safety standards.
Conduct daily safety meetings and audits.
Investigate and report incidents, near misses, and hazards.
Ensure compliance with OSHA standards and company safety policies.
Complete production reports, yield reports, downtime tracking, and labor utilization reports.
Maintain accurate records related to HACCP monitoring and operational performance.
Communicate daily performance metrics to management.
Minimum 3-5 years of experience in beef harvest operations within a USDA-inspected facility.
At least 2 years of supervisory or lead experience in meat processing.
Strong knowledge of:
Beef slaughter and carcass fabrication processes
HACCP, SSOP, GMP standards
USDA-FSIS regulations
Animal welfare requirements
Experience managing line speed and yield performance.
Strong leadership and conflict-resolution skills.
Ability to work in cold, wet, and physically demanding environments.
Proficiency in basic computer systems and production reporting tools.
